We ventured out to the Memphis farmers market this past weekend. It is so wonderful to have these amazing group of vendors back in action. Obviously it is still a little early in the season to truly enjoy the produce but we did come away with some local honey (technically from Arkansas), fresh rosemary and some cut Bachelor Button flowers. I LOVE getting fresh flowers to have on the table for week.
With my yummy honey in hand I wanted to share two health snacks that are perfect for the whole family. I will go on and say that both snacks do have a decent bit of sugar, mostly all natural, but they aren’t meant to be partnered together.
Stove top Granola
This recipe was passed down to me from church but the originator was the Pampered Chef
***Note my pictures are of a double batch***
- 1 TBSP Coconut Oil
- 2 Cups Old Fashioned Oats
- 1/3 Cup sweetened coconut
- 1/3 Cup chopped pecans
- 1/4 Cup honey
- 2 TBSP brown sugar
- 1/2 tsp ground cinnamon
Heat the oil in a skillet over medium/high heat. Add oats, coconut, and pecans. Cook for about 5 minutes.
Move the mixture to a sheet pan.
Add honey, brown sugar, and cinnamon to the skillet.
Cook for about a minute and turn off heat.
Add oats back into the mixture and let it evenly coat.
Transfer mixture back to the sheet pan and let sit for 10 minutes. Break it apart and store in a air tight container. I usually make a double batch to last the whole week!
This granola is a little bit of heaven, best part is that it is husband and kid approved. I usually serve it with vanilla Greek yogurt. Feel free to add dried fruit or even mini chocolate chips (for mommies only).
My next snack will put you in a tropical oasis. It is so yummy and filling
Recipe originated from Clean Eats, Fast Feets
- 1 large orange
- 1 Banana, peeled
- About 6 frozen pineapple chunks
- 1/2 cup of milk
Place in the blender and done!
